BELOIT – If you are looking for a great breakfast, head over to Eggsquisite Cafe. Relatively new to Beloit, Eggsquisite is a great little breakfast and lunch restaurant on Afton Road.

Once you get onto Afton, going south, it is on the right-hand side. It is that straightforward! You can take the interstate to Shopiere Road and save a few minutes but the bucolic drive on Afton is so much nicer, especially on a beautiful summer day.
With a contemporary dark gray brick facade, the color scheme continues inside with pale gray walls and white trim that pops. The restaurant sits facing the east so the morning sunshine creates a bright and upbeat ambiance. A light and airy vibe is further enhanced with recessed lighting and modern vinyl plank flooring. Clean and sparsely decorated, the restaurant has a minimalist feel. It is not a huge space but there are about a dozen tables and a few booths, along with counter service with just a scattering of stools.
Eggsquisite is a family run restaurant with many favorite Mexican dishes. I love seeing creative new places like this and found the quality of the food to be excellent. On the Sunday that we visited, they were bustling. And in chatting with the family at the next table who were gearing up to drive back home to Missouri, we discovered they were happy to have found this gem also.

First order of business at breakfast is coffee ($2.65). Many restaurants offer a non-descript cup of coffee but EggsquisteÃÛèÖÊÓÆµ is outstanding. Jennifer, Helene and I really approved. It was dark but not at all bitter. And with attentive service, our cups were frequently warmed up and topped off. Nikki had a cup of green tea ($1.65), which she also enjoyed.
There were so many items that we wanted to try, so for the table we sampled a half order of biscuits and gravy ($6.95). I am not a gravy person and I never get breakfast sausage. However, we all agreed this was delicious. The ‘biscuits’ were more like thin silver-dollar pancakes with a crisp edge, cakey and flakey. With plenty of diced sausage, it was peppery and had some heat to it which livened it up and made it somewhat addictive!
I ordered a garden omelet ($11.50). I have a thing against canned mushrooms, so I had to ask if the mushrooms were fresh-which they were. Hooray! The spinach, tomato and mushrooms were lovely and the entire omelet was covered in a layer of melted mozzarella cheese. Delightful. I had a side of sourdough toast and American fries.
Helene ordered the avocado toast ($10.99). One of the standouts for her was the bread. It was delicious. Toasted with a nice crisp crunch, the two slices were topped with mashed avocado-pretty smooth with just a few chunks-and topped with her choice of an over-easy egg on each slice. Chili flakes were sprinkled on top.
JenniferÃÛèÖÊÓÆµ choice for breakfast the morning we visited was the breakfast burrito ($11.99). She selected sausage as her meat. It was the perfect combination of all her favorite breakfast foods: soft scrambled eggs, lots of melted, gooey cheeses and savory sausage, all neatly tucked inside a grilled flour tortilla. She was more than satisfied with her potato selection of hashbrowns. Tender and fluffy on the inside surrounded by a desirable crispy outer crust. A few drizzles of hot sauce over her entire plate made for a hearty, somewhat spicy breakfast she thoroughly enjoyed.

Nikki also ordered one of the Mexican-inspired breakfast dishes. She was tempted by the chilaquiles ($15.15/chicken, $16.05/steak), with the option of either red or green sauce, but ended up ordering the chipotle benedict ($13.99) with a side of hashbrowns instead. It was a step up from the classic eggs benedict, with crumbled chorizo standing in as the meat and a tangy chipotle hollandaise that gave the dish an extra kick. The english muffin base and poached eggs, along with some chopped tomatoes, tempered the heat and made it just right for her palate. Sometimes there isn’t enough egg, but the proportions were just right and she got some of each component in every bite.
Eggsquisite CafeÃÛèÖÊÓÆµ commitment to quality as well as creating a cozy home-style dining experience is their mission and it is apparent both in their service and the lovely dishes they prepare. They blend American favorites with authentic Mexican breakfast dishes and they do it well!
